100 g aquafaba
1/4 tsp vanilla powder
1/4 tsp tartaric acid (can be omitted)
50 g maple syrup
100 g cane sugar, finely ground

Mix the aquafaba with a hand mixer or a whisk until it gets foamy and fluffy. Add all of the ingredients and keep mixing until you get a firm, shiny fluff. 
Preheat your oven to 175 degrees Celcius.

150 g rice flour
100 g almond flour
100 g maple syrup
150 g dried fruits, chopped
80 g olive oil
1 tsp sodium bicarbonate
1 tsp almond essence
100 g vanilla fluff

Mix the first seven ingredients. Gently fold in the vanilla fluff with a spatula.Add the batter to a greased bundt cake baking pan and bake in the oven for 40 minutes.
